Animal welfare before and during the slaughter of cattle in the U.E.B “Chichi Padrón”.

Abstract

The treatment given to animals during the last stage of life, from the moment they leave the farm until their death, constitutes today a growing source of concern since the standards associated with welfare are not always met, which influences the quality of meat for consumption. Therefore, the primary objective of the research was to assess animal welfare before and during the slaughter of cattle at the UEB Chichi Padrón. To undertake this work, a descriptive study was carried out, semi-standardized interviews, observation, and questionnaires were carried out with a group of operators. The main results observed in the study were deficiencies or omissions in compliance with the standards: such as poor management in the holding pens, ineffective stunning on the first attempt and the non-repetition of the procedure in these cases, sacrifice in a state of consciousness, among others, that generate visible signs of stress in animals. It was concluded that animal welfare before and during slaughter has significant cracks and insufficiencies due to non-compliance with the standards associated with this.

Resumen

El trato que se les da a los animales durante la última etapa de la vida, desde que salen de la granja hasta su muerte constituye hoy dia una fuente creciente de preocupacion pues no siempre se cumplen las normas asociadas al bienestar, lo que influye en la calidad de la carne para el consumo. Por eso el objetivo primordial de la investigacion fue valorar el bienestar animal antes y durante el sacrificio de los bovinos en la UEB Chichi Padrón. Para acometer este trabajo se efectúo un estudio descriptivo, se realizaron entrevistas semiestandarizadas, la observación, y cuestionarios a un grupo de operarios. Como principales resultados apreciados en el estudio se encontraron deficiencias u omisiones en el cumplimiento de las normas: como mal manejo en los corrales de estabulación, aturdimiento ineficaz en el primer intento y la no repetición del proceder en estos casos, sacrificio en estado de conciencia, entre otros, que generan signos de estrés visibles en los animales. Se concluyó que el bienestar animal antes y durante el sacrificio tiene grietas e insuficencias significativos por el incumplimiento de las normas asociadas a esto.
