Indicators quality pasteurized milk

Abstract

An observational cross-sectional study of a descriptive type was carried out, with the purpose of analyzing quality indicators (physical-chemical: density, fat, acidity and microbiological: Total Microorganism Count / CTMO) of the pasteurized milk, in the period from five year. In the processing of the data, the statistical package SSPS version 15 for windows was used; using mathematical methods of descriptive statistics (absolute and relative frequency), as well as the non-parametric X2 method of goodness of fit and correlation between the variables (fat-density), using the Spearman's Rho statistical test. The physical-chemical analysis revealed alterations in the variables studied. The highest number of samples presented values higher than 105 ufc/g of microorganisms. Regarding variables analyzed and months, a predominance of the month of december, february, september, october, movember, january was evidenced

Resumen

Se realizó un estudio observacional transversal de tipo descriptivo, con el propósito de analizar indicadores de calidad (físico-químicos: densidad, grasa, acidez y microbiológicos: Conteo Total de Microorganismos/ CTMO) de la leche pasteurizada, en el periodo de cinco años. En el procesamiento de los datos, se utilizó el paquete estadístico SSPS versión 15 para windows; empleándose métodos matemáticos de la estadística descriptiva (frecuencia absoluta y relativa), así como el método no paramétrico X2 de bondad de ajuste y de correlación entre las variables (grasa-densidad), empleándose la prueba estadística Rho de Spearman. Los análisis físicos-químicos revelaron alteraciones en las variables estudiadas. El mayor número de muestras presentaron valores superiores 105 ufc/g de microrganismos. Respecto variables analizadas y meses, se evidenció un predominio del mes de diciembre, febrero, septiembre, octubre, noviembre, enero
